When it comes to cooking Chinese food, I think we all know that you need to get the wok as hot as you dare, before quickly cooking the food to retain all the goodness. So how do you go about choosing a wok that can withstand this type of constant heat? Is there a particular metal that we should be looking out for? Does the base matter and is non-stick a no-brainer? And what about PFOA, a compound used in the making of non-stick surfaces that is thought to be a health concern?
We’ve searched the internet and have come up with the ten best woks that tick all the above boxes, and in every price range:
A great pan to start off with if you are new to Asian cooking as it has shallow sides and is a little smaller than usual at 12”. The bowl of the pan is deeper which makes it easier to stir food and keep it in the wok and it has a non-stick surface so cooking and cleaning are a cinch.
Now Ken Hom knows a thing or two about woks and Asian cooking and he designed this wok to be made from non-stick carbon steel. It has a flat bottom for easy cooking, the handles are made from beech wood which do not get hot and therefore make transferring the pan from stove to table much easier.
This wok is dishwasher-safe and oven-proof up to 350° Fahrenheit, but what a lot of customers like the most is that it is incredibly lightweight, despite is being quite large at 14”. Has a non-stick surface and is made from aluminium.
This wok is 15” in diameter and it is heavy which makes it a good wok for larger gatherings or big families. Made from stainless steel, it has a helper handle on the opposite side and comes with an air-tight glass lid which helps to lock in all those essential nutrients.
Many woks need to be weighty in order to withstand a higher heat, this one from Sur La Table is made from ceramic and achieves the same heat distribution but in a much lighter pan. You can use it on the stove or take it camping with you.
One of our cheaper woks but a great value pan that is made from anodized aluminium and features a non-stick surface that cooks evenly and can also go in the oven. The handles are shaped for comfort and the wok cleans easily. A good bargain wok.
This wok is free from PTFE, PFOA and any other harmful chemicals that are associated with non-stick layers. Instead it uses a final layer of ceramic so that you can fry, broil, poach and baste a number of dishes and clean the wok easily after cooking.
An easy-to-clean wok here thanks to the anodized construction. The 14” diameter means that this wok is perfect for larger families and the even heat distribution makes sure that every piece of food is cooked properly. The lid makes this wok extra versatile.
This wok uses an advanced five-ply construction and an aluminium-alloy core for even heat distribution and comes with really durable and weighty handles which make transferring the wok from stove to table much easier.
This is the wok that professionals use as it has a superior non-stick surface which is made from ceramic and titanium. PFOA free, you can even use metal utensils on this wok as the surface won’t scrape or blister away. Exceptional cooking but you would expect so for this price.
